Okay girls, I need some help spicing up our menus. I'm getting ready to plan out the month of February. If any of you have menus you could post that would be incredibly inspiring! This is what were having this week (I think).
Mon - Chicken noodle casserole (this is today's invention, we'll see)
Tues - Beef stew (if the meat gets defrosted)
Wed - Breakfast
Thurs - Chicken, rice and broccoli
Fri - Red Robin! :)
Sat - Hot wing pizza

How do you make your fried rice?
I cook about 3 cups of rice. I normally use leftover pork of some sort but the original recipie calls for Spam. Heat it up, then dumb a few eggs over it that have been whisked and cook like scrambled eggs. When the eggs look like they are almost done, I scoot the eggs/meat around to the edges and pour some frozen peas or peas/carrots into the middle and then dump the rice over the top of everything and pour a swirl of soy sauce over the top. Cover and let the veggy's get warmed. Then I mix and serve.
